Gather the Ingredients

Start the process by gathering your ingredients. You will need:

  • 3 cups of half and half
  • 2 ounces of bittersweet chocolate
  • 1/3 cup of sugar
  • 3 egg yolks
  • 1/3 cup of unsweetened cocoa powder
  • 1 tablespoon of pure vanilla extract
  • ½ tablespoon of salt

Make the Ice Cream

Put the half and half and vanilla extract in a large pot, and bring it to a simmer. Let it simmer for 15 minutes and then strain it into a medium-sized bowl. And in the chocolate, and stir it up. Put it off to the side for now.

Put the egg yolks, sugar, salt, and cocoa powder in a large bowl, and whisk it together until it’s smooth. Take a cup of the warm half and half mixture and whisk it into the bowl. Slowly add the egg mixture and the remaining half and half mixture to a pot, using your whisk to combine it. Cook it on medium-low heat, and stir it until it reaches 170 degrees. Then, strain it into a bowl. Place the bowl in an ice bath until it cools to room temperature. Put it in the refrigerator for two hours.

Once two hours pass, put the ice cream in an ice cream maker. Process it until it has a consistency that is between frozen and soft serve ice cream. Put it in an ice cream container and place it in the freezer. Leave it there until it is firm.
